Welcome to one of our first Single Origin Chocolate making kits. This Bolivia 3 Tribes cacao leads with bold chocolate, dried fruit, and a whisper of browned butter—finishing long, dark, and deeply satisfying.

This origin really shines at 70% and a touch of added cocoa butter rounds out the profile and helps open up the flavor as it refines.

Everything is pre-roasted, winnowed, portioned, and measured—no weighing, no prep, no stress. Just pour it into your melanger and let the magic happen. By the next day, you’ll have fresh craft chocolate.

Here we go with another mighty giant. These wild collected beans beans are tiny and pack an incredible chocolate punch. Why? The average cocoa bean is 90-110 beans/100 grams. These average 145-155 beans/100 grams. What comes with that small size is a distinct density and concentration of flavor.

The aroma bold chocolate and sweet, rich dried brown fruits. Just the smell had my mouth watering.

There is no mistaking the punch of chocolate as soon as you take a bite. I associate that strong and bold presence with most wild harvested beans, regardless of origin. There is a really nice soft tang that I almost hesitate to call acidity . In the roast there was browned butter wafting off and it comes through just a little in the flavor. It is coupled with a light brown sugar clarity and dried cherry. Oh, and more chocolate. It puts me in mind of a gooey, dense fudge cake.

Once you start to savor the chocolate and roll it around in your mouth you will note a moderate backbone of bitterness and a virtually perfectly balanced astringency. The bitterness puts me in mind of certain coffees and where it doesn't really taste like coffee, it kind of has the synergy of a mocha.

The finish is long and has layers of cherry jam and some undefinable darkness that I almost want to call earthiness but not really.

Dark Chocolate

This kit includes all the materials you need for making a batch of untempered chocolate, already portioned out. You won't need to roast, winnow or even weigh anything. All you have to do is toss the supplied ingredients in your Melanger and in the next day or so you will have chocolate ready to temper or store (or other uses as you see fit).

A Melanger is 100% required to refine the ingredients to smooth modern chocolate. This is not optional.

Basics: We assume you have basic cooking equipment and utensils and a basic home oven.
For Tempering: We can't recommend using Silk enough. Makes it dead simple and reliable to get a modern shine and snap finish on your chocolate. Please know, we are only able to ship Silk in the cooler months.
Molds: We suggest our chocolate molds for tempering to make sure you have enough. Many People enjoy our Professional Grade 2oz Bar Mold.

To preserve its freshness and rich flavor, always store chocolate making ingredients in an airtight container in a cool, dry place, away from direct sunlight. They benefit from stable, moderate conditions and should be kept sealed when not in use.
