Chocolate Making 201 Class - December 6, 2025
This is the next level up and geared toward those that roughly know what it takes to make chocolate from scratch but need a little encouragement and security to jump from buying roasted nibs to whole raw cocoa beans. It is a full day and geared a bit more for those that want to come in from farther away. We’ll cover each step in a bit more detail than the Chocolate making 101 demo and there will be more hands on, tempering included.

We’ll cover
- How different kinds of cocoa beans affect chocolate flavor,
- How cocoa beans are roasted and how different roasters affect the final chocolate
- How the husk is separated from the beans and you’ll get your hands dirty doing some yourself.
- Constructing recipes and troubleshooting questionable batches of chocolate
- We will start multiple batches of chocolate.
- Theory and practice of tempering. You'll hopefully leave with chocolate you have tempered yourself. discussion and basic demo.
- Questions and answer session
A general familiarity with chocolate making is helpful. Although not required it is nice if you have tried making a batch or two yourself.
An eagerness to learn is required.
