Dark Chocolate Making Kit



Life gets busy. Even when we love making chocolate, the biggest obstacles tend to be the simple ones:

Which bean? How to roast it? What recipe? And when will I find the time?

So this is my offer to bring you joy.

Everything is pre-roasted, winnowed, portioned, and measured. No weighing. No prep. Just pour it into your melanger and let the magic happen. By the next day, you’ll have fresh craft chocolate.

Every kit includes:

  • Roasted cocoa nibs

  • Sugar (pre-measured)

  • Any necessary extras, such as cocoa butter, milk powder, or vanilla beans — depending on the recipe

  • The roast profile used for the featured bean

  • Clear, simple instructions

Just like meal-kit subscriptions assume you own a pan, this one assumes you have a melanger (such as the Spectra 11) and a basic home oven.

You do have a couple choices you can make. 

What percent dark chocolate do you want?  I’m defining Dark chocolate as 75-85%.  80% (with 4-6% cocoa butter) is my go to recipe if you don’t know what to pick.

You also have the option of using Allulose (a zero glycemic index sweetener).  It is only 70% as sweet as regular sugar, so keep that in mind.  A 75% allulose recipe will probably taste more like a 82% regular chocolate.  If that is too dark for you have a look at the Semi-sweet chocolate making kit.

So as not to overwhelm you with choices, you don’t even have to pick a bean.  I’ll pick one for you that I think will suit the percentage you pick.  Of course, if you really want a particular bean, leave me note in your cart and I will be happy to oblige.

Since these kits are made to order, they will probably take a few extra days to formulate and prepare.  In that preparation I will include the recipe and roasting profile of the beans.
