This is a spray dried, whole butter milk powder that is a really interesting variation on classic milk chocolate. You might expect it to be sour but instead if leads this extra depth of flavor that I find really satisfying.
6.5% fat by weight
I have a page for the Milk Chocolate Recipe I use quite a bit. It works just fine with this Buttermilk powder. It gives full directions. If you use the following ratios (a little different from the recipe below), you can make a smaller, slightly different batch of 48% milk chocolate.
This Butter Milk Powder will also work quite nicely for a White Chocolate.
For those drinking this, 1 lb will make approximately 1 gallon of buttermilk. This also translates to about 1 oz or 3 T per 8 oz of water.
Finally, I was told the Canadian import tariff on powdered milk is 243%, if you are ordering from there, you may need to take that into account.
