Specialty 'Aztec' mold | |

I really was not sure what to call this, so Specialty Aztec mold it is. Specialty because they are a special. We only have 20 of these, and when they are gone, there will be no more. Aztec – well, they just struck me that way with the trapezoidal shape and how a friend stacked them up (check out the 2nd photo). Also, in regards to the specialty designation, these are VERY heavy in comparison to even the Professional molds we have. Totally rigid and thick walled. These will easily last years if not decades. The price reflects this. This mold holds about 14 ounces of chocolate total. It has 72 cavities that hold about 0.2 oz/6 grams of chocolate each. One minor note. You are going to make sure you have your tempering down for this mold. If not, the chocolate is not going to release from the mold. You can’t cheat here and flex the mold just a touch to pop the chocolate out. | |
